Born and raised in Prague, Denise Mazal is an internationally recognized Czech chef whose culinary journey has carried her from Europe to the Texas Hill Country.

After leaving Czechoslovakia in the 1970s, Denise continued her culinary career in Europe, including experiences at the Hotel Concorde Lafayette in Paris and with the Hilton Corporation in Munich. She eventually made her home in Boerne, Texas, where she founded and operated Little Gretel, sharing the flavors, traditions, and stories of her Czech heritage with generations of guests.

Under Denise’s direction, Little Gretel became much more than a restaurant. It became a place where food, history, culture, and hospitality came together. Her cooking introduced many guests to authentic Czech cuisine while showing that traditional Czech food could stand proudly alongside the great cuisines of the world.

Her work has been recognized with numerous honors, including Best Business of the Year by the Greater Boerne Chamber of Commerce in 2010, recognition among Best Chefs America in 2013, placing her among the top 1.5% of chefs in the United States, and Best Woman of the Year by the Greater Boerne Chamber of Commerce in 2015. In 2024, the Czech Culinary Association honored Denise with its highest distinction for a lifetime of dedication and achievement in Czech gastronomy.

Denise believes food is more than something we eat. It is a way of remembering where we came from, sharing who we are, and connecting generations.

As she once wrote in The Aroma of Czech Cuisine, she was grateful that Little Gretel was recognized as more than simply another restaurant — but as a special place where, through all the senses, guests could experience her stories and discover that Czech cuisine belongs proudly among the cuisines of the world.

Today, Denise continues to share her culinary knowledge, Czech heritage, and passion for storytelling through her cookbook, culinary demonstrations, festivals, and educational work. Her greatest achievement may be the opportunity to keep those traditions alive — one story, one recipe, and one table at a time.

Little Gretel

Chef Denise and her husband, Jimmy Mazal, moved to Boerne, Texas from Colorado to raise a family in the beautiful Texas Hill Country. After their four children were all grown up, Chef Denise and her daughter Veronica decided to open Little Gretel in 2009.

Created with love and passion, like the skilled Czech chefs who migrated for years to Vienna with their Czech recipes, Little Gretel offers the best, well-tested recipes from Chef Denise’s own heritage, family owned cookbooks and invaluable experience in owning and operating restaurants. This establishment features dishes from Chef Denise’s past, including many unique menu items such as authentic Czech, traditional German and American favorites not found anywhere else in the Hill Country.

Chef Denise has since retired from the restaurant, but she continues baking kolaches in Boerne as Love Kolaches to keep the tradition alive.
